Turkish Baked Pumpkin Dessert

Ingredients

  • Pumpkin
  • 750 g cleaned ripe pumpkin

  • 400 g granulated sugar

  • 4-5 drops lemon juice

  • 1 cinnamon stick

  • 3 star anise

  • 4 cloves

  • Chantilly
  • 200 g thickened cream

  • 10 g icing sugar

  • 1 lime zest

  • Hazelnut Tuille
  • 60 g egg whites

  • 50 g sugar

  • 30 g flour

  • 60 g hazelnut meal

  • 10 g butter

  • 2 g salt

  • Blend, spread on molds, bake at 160C approx. 5 min.

Directions

  • Pumpkin
  • Clean the pumpkins from the fibers and green parts
  • Portion them nicely
  • Rinse them in water, drain
  • Put some of the sugar on the bottom of the pot, let the outer part of the pumpkin touch the bottom
  • Sprinkle the remaining sugar on top, add spices, let it sit for 3 hours with a weight, let it release its water
  • First cook on high heat, then on low heat with baking paper on top. Cook in the oven at 200 C until it gets darken in color.
  • Chantilly
  • Whisk cream lime zest and icing sugar until it gets thickened.
  • Hazelnut Tuille
  • Blend, spread on molds, bake at 160C approx. 5 min.
