Turkish Baked Pumpkin Dessert

- Pumpkin
750 g cleaned ripe pumpkin
400 g granulated sugar
4-5 drops lemon juice
1 cinnamon stick
3 star anise
4 cloves
- Chantilly
200 g thickened cream
10 g icing sugar
1 lime zest
- Hazelnut Tuille
60 g egg whites
50 g sugar
30 g flour
60 g hazelnut meal
10 g butter
2 g salt
Blend, spread on molds, bake at 160C approx. 5 min.
Directions
- Pumpkin
- Clean the pumpkins from the fibers and green parts
- Portion them nicely
- Rinse them in water, drain
- Put some of the sugar on the bottom of the pot, let the outer part of the pumpkin touch the bottom
- Sprinkle the remaining sugar on top, add spices, let it sit for 3 hours with a weight, let it release its water
- First cook on high heat, then on low heat with baking paper on top. Cook in the oven at 200 C until it gets darken in color.
- Chantilly
- Whisk cream lime zest and icing sugar until it gets thickened.
- Hazelnut Tuille
- Blend, spread on molds, bake at 160C approx. 5 min.
