1 kg runner/green beans
8 onions
5 garlic cloves
350 g crushed tomato
120 ml olive oil
15 g sugar
Salt to taste
Extra virgin olive oil to drizzle later
Directions
- Slice the onions into julienne strips.
- Cut the beans in half.
- Lightly crush the garlic cloves.
- Sauté the onions in olive oil over medium heat until they are golden and caramelized.
- Add the beans, garlic, tomatoes, salt, and a pinch of sugar to the pan.
- Cook until the beans are tender.
- Remove from the heat, transfer to a glass container, drizzle with extra virgin olive oil, and refrigerate. Serve cold or at room temperature the next day.
