Ingredients

  • 1 kg runner/green beans

  • 8 onions

  • 5 garlic cloves

  • 350 g crushed tomato

  • 120 ml olive oil

  • 15 g sugar

  • Salt to taste

  • Extra virgin olive oil to drizzle later

Directions

  • Slice the onions into julienne strips.
  • Cut the beans in half.
  • Lightly crush the garlic cloves.
  • Sauté the onions in olive oil over medium heat until they are golden and caramelized.
  • Add the beans, garlic, tomatoes, salt, and a pinch of sugar to the pan.
  • Cook until the beans are tender.
  • Remove from the heat, transfer to a glass container, drizzle with extra virgin olive oil, and refrigerate. Serve cold or at room temperature the next day.
