Ingredients

  • Tempura Batter
  • 120 g flour (sifted)

  • 1 tsp baking soda

  • 2 tsp potato starch

  • 1 egg

  • 240 g ice water

  • Panko Breading
  • 150 g flour

  • 2 eggs

  • 150 g panko crumbs

Directions

  • Tempura Batter
  • Mix all the ingredients together except the flour.
  • Sift the flour into the mixture.
  • Mix shortly until combined.
  • To keep the batter cold, have an iced bowl underneath the mixture.
  • Panko Breading
  • Lightly coat the chicken pieces in all-purpose flour. This helps the egg stick better.
  • Dip the floured chicken into a bowl of beaten eggs, making sure it’s fully coated.
  • Press the chicken into a plate of panko breadcrumbs, ensuring an even, crispy coating all around.
