- Tempura Batter
120 g flour (sifted)
1 tsp baking soda
2 tsp potato starch
1 egg
240 g ice water
- Panko Breading
150 g flour
2 eggs
150 g panko crumbs
Directions
- Tempura Batter
- Mix all the ingredients together except the flour.
- Sift the flour into the mixture.
- Mix shortly until combined.
- To keep the batter cold, have an iced bowl underneath the mixture.
- Panko Breading
- Lightly coat the chicken pieces in all-purpose flour. This helps the egg stick better.
- Dip the floured chicken into a bowl of beaten eggs, making sure it’s fully coated.
- Press the chicken into a plate of panko breadcrumbs, ensuring an even, crispy coating all around.
