Ingredients

  • 4 medium round potatoes

  • 2 tbsp olive oil

  • 2 cloves garlic, finely minced

  • Fresh thyme or rosemary

  • Salt and freshly ground black pepper, to taste

Directions

  • Preheat your oven to 200°C.
  • Wash and scrub the potatoes thoroughly.
  • Place each potato between two wooden spoons or chopsticks, then slice crosswise into thin, even slices—about 2–3 mm apart—stopping just before you cut all the way through (head to the Instagram @firinforno for the reels of this trick).
  • In a small bowl, olive oil, minced garlic, salt, pepper, and herbs if using.
  • Place the potatoes on a baking tray lined with parchment paper.
  • Brush generously with the butter mixture, making sure it seeps into the slits. Reserve some for later basting.
  • Roast in the preheated oven for 45–60 minutes, depending on the size of the potatoes. Every 15–20 minutes, baste with the remaining oil mixture to ensure crispness and flavor.
  • Once golden brown and crisp on the edges, remove from the oven.
  • Garnish with fresh herbs and serve hot as a side dish.
