Ingredients

  • 120 g butter (softened at room temperature)

  • 75 g brown sugar

  • 75 g granulated sugar

  • 1 egg

  • 200 g flour

  • 30 g cocoa powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 175 g chocolate

Directions

  • Preheat your oven to 180°C fan. Line two baking trays with baking paper.
  • In a bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  • In a separate large bowl, beat softened butter, brown sugar, and granulated sugar until creamy.
  • Add egg and mix just until combined.
  • Gradually fold in the flour mixture until a soft dough forms.
  • Chop or break chocolate into chunks. Fold most into the dough, reserving some for topping.
  • Portion the dough into 50 g balls, place on trays spaced apart, and top with extra chocolate chunks.
  • Bake for 10–12 minutes, removing when edges are set but centers are slightly soft. They will firm as they cool.
  • Cool briefly on trays, then transfer to a wire rack. Serve slightly warm for maximum chocolate indulgence.
